Chocolate Coffee & Pistachio Bliss Balls Recipe

I am a sucker for bliss balls, I think that two of them make for the perfect afternoon or morning tea! These soft and textured chocolate coffee and pistachio balls are better suited for that 3pm pick up, due to the little bit of coffee in them.

Chocolate Coffee & Pistachio Bliss Balls

Ingredients
  • 16 dates
  • 2 shots espresso (Griffith Bro's Just Fair)
  • 2tbs cocoa or cacao powder
  • ½ cup coconut
  • 2 tbs coconut oil
  • 1 cup almonds
  • 1 cup almond meal
  • 1 tsp vanilla paste
  • ¼ cup sunflower seeds
  • 1 tsp cinnamon
  • 1 cup pistachios
Instructions
  1. Place all ingredients except for the pistachios and sunflower seeds into the blender and blend until smooth. TIP: The mixture should be slightly sticky but not so sticky that it won't hold together. You can add additional almond meal if you feel it is too sticky or more coconut oil if too dry. The reason this may vary is due to the size of the dates used.
  2. Add in sunflower seeds and pulse lightly, leaving them mostly whole or half size to give texture.
  3. Remove mixture from food processor.
  4. Without washing the processor, place the pistachios in and pulse a few times until roughly chopped.
  5. Set aside on a plate.
  6. Take a large scoop of the mixture with a teaspoon and roll the mixture into balls.
  7. Roll the balls into the pistachio mix until the ball is coated with the pistachios.

 I was so excited to finally find some organic and fairtrade coffee capsules! By purchasing Just Fair Coffee you are voting with your dollar to support coffee farmers and help them be treated fairly with decent pay and conditions. The payment for fairtrade coffee can be the difference between 1 or 3 meals a day for a farmer (and be assured these are very basic meals). Buying fair trade also means that you know that you are not supporting child labour as to be certified there are certain standards which the farms have to adhere to.

 The coffee is organic which means it is 100% chemical free. This is not only good for your consumption but also the health of those living on the coffee farms. This is because the heavy chemicals usually used in coffee farming can (if not managed properly) lead to pollution of the soil and local water streams.

    Hi - sorry, but I can't quite make out why there isn't any cacao / cocoa / chocolate in the ingredients list...is it supposed to be 1/2 cup cacao or cocoa where it says coconut? Thanks!

      Hey Johanna, Thank you SO much for taking the time to comment and let me know. It's an additional 2 tbs of cacao or cocoa (whichever you prefer, I used cacao).     I just made these. I think the almond meal makes them taste bad. Normally I love date and nut bars. I put them in the freezer and I’m hoping they taste better.

    I remade these and this time I chopped the nuts first in the food processor rather than putting in everything at the same time (my food processor could not handle everything at once; it clumped together but wouldn’t mix it around anymore). They turned out beautifully! I take back my negative comment! Thank you for this stellar recipe!
